Tofu Scramble
Hi everyone, Sprout here! I thought for our very first post, we should share a family favorite breakfast dish. This tofu scramble is super easy to make, customizable to your personal taste/preferences, and it’s versatile (it goes great with just about anything!). It’s also a good substitute for those who can’t or don’t enjoy eggs… or anyone just wanting to switch things up a little. We hope you give it a try and enjoy it just as much as we do!
(Note: We use firm tofu here, but feel free to experiment with a medium as well if you prefer a softer scramble!)
Tofu Scramble
Ingredients:
-½ Block firm tofu
-1 Tomato
-½ Onion
-½ Bell pepper
-½ Tsp Turmeric powder
-Salt and pepper to taste
Optional:
-Spinach
-Vegan cheese
-Parsley or cilantro
Steps:
First drain and pat dry your tofu.
Finely dice all your veggies and herbs (if using).
On medium heat, sautee your onions with a bit of salt and oil until they go soft and translucent. Then add in your peppers and tomato, and cook until soft. Toss in your turmeric and give it a quick stir before crumpling your tofu into the pan. You can pre-crumble the tofu with a fork if you like, or just crumble it with your hands straight into the pan.
Cook until the tofu gets a nice sear on it, then add in any optional and additional ingredients like spinach, herbs, or cheese.
Give it a quick taste test and adjust salt and pepper to your liking.
That’s it! Enjoy with some toast, or in a breakfast wrap with all the works and fixings.
