Potato Croquettes

Happy weekend everyone! Today’s recipe is super delicious, easy to customize, and makes a great snack, appetizer, or main dish. Hope you enjoy these potato croquettes! 

Potato Croquettes

 

Ingredients:

-4 Medium sized boiled potatoes

-3/4 Cup GF breadcrumbs

-Unsweetened non-dairy milk

-½ Cup chopped spinach or preferred green

-½ Cup of frozen peas or peas and carrot mix

Seasoning (any combination of these to your taste!):

-2 Tbsp grated garlic or garlic powder

-1-2 Tbsp Rosemary

-1 Tbsp Sage

-2 Tbsp Thyme

-Vegan shredded cheese (we recommend a white cheese for this recipe)

-Salt and pepper to taste

 

Steps:

Peel, boil, then allow your potatoes to cool to the point that you can handle them (it’s ok if they’re still a little warm). 

Mash them in a bowl and then add your veggies and seasoning. 

To bind everything together, add a few drops of the milk until you can form a dough. If the mix accidentally gets a little too wet, you can add a few spoonfuls of GF flour or a little bit of your breadcrumbs. 

Using your hands, roll the dough into balls or logs, and then roll them into the breadcrumbs. If the breadcrumbs have trouble sticking, you can lightly brush your pieces with some of the milk or a little water before rolling it in the crumbs. 

Place on a lined and greased baking sheet, and spray or drizzle with a bit of extra oil on top. 

Bake at 400 degrees fahrenheit for 15 minutes or until golden brown. Just be sure to flip them about half way through so both sides can get crispy! 

If you don’t want to use the oven, you can also pan fry them for about 3 or 4 minutes on each side until you get your desired color and crispiness.
