“Meat” Sauce

Happy Sunday everyone! Today we have a vegetarian version of a classic meat sauce! If you’ve never had it before, it’s essentially seasoned ground beef cooked with onions and served with tomato sauce over pasta. Today we’ll be making it using diced mushrooms, but you are welcome to use any substitute you like. Alternatives we’ve tried include tofu and veg beef substitutes like beyond or impossible. We’ve even seen some people using crushed walnuts if nuts are a part of your diet and you’re feeling adventurous!
Just note that if you would like to sub for tofu, we recommend pressing it between some paper towels or cloth with a heavy weight on it for about 15-30 minutes, then crumpling it up. Usually pressing is enough, but you can take it one step further, and put it in the oven at 300 degrees for another half hour or so to dry  it up some more. The reason for pressing and drying is to help remove water from the tofu so it can soak up more sauce and flavor. Definitely worth it!    

Vegan “Meat” Sauce

 

Ingredients:

-2 Cans of crushed tomatoes (or swap with 2 large juicy tomatoes)

-½  Onion

-1-2 Garlic cloves (crushed) 

-1 Cup diced mushrooms, crumbled tofu, TVP, or vegan beyond/impossible meat. For extra flavor, you can even combine the mushrooms with one of the other subs! 

-Salt and pepper to taste 

Optional: 

-1 Tbsp tomato paste (helps boost the flavor) 

-Fresh or dried herbs like oregano, basil, and/or chili flakes (to your taste)

 

***Side Note: if you don’t want to make your own sauce, swap the tomatoes for your favorite pre-prepared marinara. We don’t judge! 

 

Steps:

Start by finely dicing up your onions (and mushrooms if using), and crushing your garlic. 

Heat a pan up with some olive oil and cook your onions down until they’re soft.

Then toss in your garlic and stir until fragrant (under a minute). Add in your meat substitute and cook down until it gets a nice sear and/or color to it.

Then add in your tomatoes/ tomato sauce, then cover and simmer for at least 10 minutes. When making your own sauce, the longer you simmer it, the more flavorful it gets – especially when using tofu or tvp as the meat substitute! 

Stir in, or garnish with your favorite herbs, then serve over pasta, with garlic bread, or even with veggies and rice.
