Apple Loaf

Happy Sunday! As November comes to a close and the weather gets colder, we wanted to share some cozy and filling sweet treats to enjoy with your favorite hot drink. Today, we’re sharing a tasty recipe for an apple loaf! Chock full of apple cinnamon-y goodness, you can make this as a loaf, or little muffins if you’re on the go! Either way, we hope you have fun making these and enjoy! 

  APPLE LOAF

 

Ingredients:

2 cups GF flour 

1tbsp cinnamon (to taste) 

3/4 tbsp baking powder 

Pinch salt 

Vanilla 

1/4 cup light brown sugar 

2 tbsp flax egg (gel ground flax in 6tbsp water) or any vegan egg sub equaling 2 eggs

3 tbsp olive or neutral oil 

1/2 cup apple sauce (homemade has more flavor if you have the time!) 

1/4 cup milk 

1/2 apple 

 

Optional Crumb Topping: 

1/4 cup butter or dairy-free butter melted

1/4 cup brown sugar

1 tsp cinnamon

Pinch of salt

3/4 cup GF flour (you can also mix in oats or oat flour for a heartier taste!)



Steps: 

Start by peeling and dicing your apple into small pieces. Place in a saucepan with a few tablespoons of water (just enough so the apples don’t burn), a few drops of lemon juice, and a bit of sugar and cinnamon to taste (just a little as a lot will be going in the loaf). You can also add a tablespoon of vegan butter if you have it.  Sautee on medium-low heat until the apples are soft and beginning to caramelize. Set aside to cool. 

Preheat your oven to 350F

In a bowl, mix all your dry ingredients together, then whisk in all your wet ingredients until everything is smooth and there are no lumps. 

Stir in your cooked apples, and scoop your batter into a loaf or cake pan, or muffin tins if you want minis.

If using the crumb topping, go ahead and liberally sprinkle over the top.

Bake until cooked through. Depending on the size of your tin, anywhere around 30-50 minutes. You’ll know it’s cooked when you insert a toothpick and it comes out with a few dry crumbles or it’s clean. 

Enjoy with a delicious cup of hot coffee, cider, or tea!
