Very Berry Crumble
Happy Sunday everyone! Since berry season is just around the corner, we wanted to share a sweet and simple recipe with you all that you can enjoy with whatever blend of berries (or other fruit) you like! It’s entirely vegan and gluten free – the crumble on top uses all oats and oat flour. Hope you enjoy it!
BERRY CRUMBLE
[makes 1-2 servings using a 6” pan]
Ingredients:
Crumble:
– 1/2 cup GF rolled oats (not instant!)
– ½ cup GF oat flour (if you have a food processor you can just use an additional ½ cup of oats)
– pinch of salt
– 1-2 Tbsp sugar
– 3-4 Tbsp vegan butter
– Vanilla [optional]
– Cinnamon [optional]
Fruit Filling:
– 2 Cups fresh or frozen berries
– 1-2 Tsp sugar [optional]
– ½ Tbsp lemon juice
– 1 Tbsp cornstarch, potato starch, or GF AP flour
Steps:
Let’s start with making the crumble first! If making your own oat flour, take ½ a cup of oats and blend them in a food processor until you get a fine flour.
Then go ahead and mix the oat flour with your rolled oats, salt, sugar, and vanilla (if adding).
Using a fork, mash the butter into the flour mix until it starts to clump together and there is no loose flour.
Place in the fridge or freezer for a few minutes while you prep the filling.
Preheat your oven to 375 F
Mix your berries with the lemon juice, sugar, and starch, and pour into your pan or ramekins.
Take your crumble topping and sprinkle it on top.
Bake in the oven for 25-30 minutes, or until the crumble turns a golden brown, and the berries underneath are cooked through.
Let cool and top with your favorite vegan whipped cream, or ice cream, and enjoy!
