Heart Shaped Jammy Dodgers

Happy Sunday everyone! Since Valentine’s Day is coming up soon, we wanted to share a cute and easy to make sweet treat to share with your loved ones. We present to you, heart shaped jammy dodgers! You can of course use whatever shapes you like, but we’re doing hearts to stick with the theme for this weekend. Hope you enjoy! 💖 

Heart Shaped Jammy Dodgers

 Makes about 6 jammy dodgers + 6-8 center-cut cookie bits! 

 

Ingredients: 

1 ¼ Cup gluten free flour (we use the Good & Gather brand from Target)

8 Tbsp vegan butter

3-4 Tbsp sugar

½ Tsp vanilla

2 Tbsp water

Pinch of salt

Jam of your choice (we like raspberry!)

Powdered sugar (optional)

 

Steps:

With an automatic hand mixer or a fork, mash then whip the butter, sugar, and vanilla together until it is smooth and there are no lumps.

Then sift in your flour and mix until thoroughly combined and a dough starts to form.
(if mixing by hand, it helps to smush the flour and butter mix together in your hands or between your fingers. It will be a bit lumpy at first, but keep going until there are no lumps and you should be able to pack the dough together into a crumbly ball)

Add a tablespoon of water to the dough and mix it in completely. You want to be able to form a smooth ball of dough that doesn’t crumble too much. If you feel it is still a bit dry go ahead and add 1 more tablespoon of water.

Once your dough is ready, ball it up, cover it, and place it in the fridge to set for about 30 minutes.

Once the dough has had time to chill, roll it out to a little less than 1/8th of an inch thick, then cut out your shapes with the large cookie cutter until you run out of dough.

Take half of your cookies and use the smaller cookie cutter to cut out shapes in the middle. 

Place everything onto a lined baking sheet and place in the fridge for another 15 minutes.

Preheat your oven to 350 F, and when the cookies are done chilling, move them from the fridge to the oven and bake for 12-18 minutes or until the edges just start to turn golden/light brown. 

Place your cookies on a rack and let them cool fully (it’s the hardest part, but you can do it)!

Take all the cookies that have no cut-outs and place a spoonful of jam in the center. Then take your cookies with the cut-outs, and gently press them on top over the jam covered ones. 

Lightly sift some powdered sugar around the edges of your cookies if you like, and they’re ready to go.

⭐  Fun tip – if you save and bake all the cute little cut-out pieces of dough from earlier, you can put some frosting and sprinkles on them, or even dip them in chocolate for another sweet treat.
